Sweet Onion, Pepper Chicken Fettuccine

Here is my favorite Pasta dish. This is usually a crowd favorite.

Sweet Onion, Pepper Chicken Fettuccine
Ingredients
3 tablespoons of olive oil
1 onion, sliced
3 green peppers or any peppers you like sliced
1 small tomato or half of a medium one chopped
About 1 lb of chicken
1 tablespoon of ground Thyme
2 teaspoons of powder garlic
½ cup of chicken stock or broth
2 tablespoons of honey
half a pack of Fettuccine noodles 12 oz
Shredded Parmesan cheese for topping
Salt and black pepper to taste
Optional ½ teaspoon of cayenne pepper or ¼ of a fresh cayenne pepper, add more if you really like it spicy!
Throw on an apron, and let’s cook!
Cook pasta in boiling water.
Add two tablespoons of olive oil to a hot skillet, then add onion, peppers and tomatoes. Add ½ tablespoon of Thyme, 1 teaspoons of garlic, 1 tablespoon of honey and a shake of salt and black pepper to onions, peppers and tomatoes. Cook until done.
Remove onions, peppers and tomatoes. Add rest of olive oil (you may have to add more for the chicken to not stick to skillet, use your judgment). Add cut-up chicken (or cut it up once cooked, which is what I do), add ½ tablespoon of thyme, 1 teaspoon of garlic, and 1 tablespoon of honey. If you are using cayenne pepper, use it now. Once chicken is cooked, put onions, peppers and tomatoes in skillet with chicken. Cook for 3 minutes. Add chicken stock. Continue to cook for about 10 minutes (or until chicken stock is cooked down). Taste and add salt and pepper if needed and additional ingredients such as garlic, thyme and honey to your taste preference. Mix into pasta. Sprinkle Parmesan cheese when served.

Since we love onions and peppers, we normally just add and add them to this dish! Banana peppers taste great in this dish too. You cannot go wrong. Just adjust ingredients to your taste.
