Pizza sauce from fresh vine ripe tomatoes

This is one of those make as much as you need recipes with hardly any measuring. You will need:
Vine ripe tomatoes (I used three semi-small ones)
Olive oil (about 3 tablespoons)
garlic (however much you like)
Italian seasonings (few shakes)
Basil (one good shake)
Oregano (one good shake)
Parmesan/Romano cheese (sprinkle type of cheese)
Onion (only about a tablespoon, this is more for flavor)
Sea salt/or regular salt (two good shakes)
Italian bread pop-up cans or any dough you like

Chop tomatoes very fine, add olive oil to pan. Cook for about 5 minutes, add garlic, onion, seasonings, salt and cheese. Cook for 10 minutes. Mash with a potato masher or food processor.

Cook the dough half way. Add a little garlic,
Italian seasonings and sprinkle cheese to dough before half cooking, do not let get brown. You are really just looking for the dough to rise in the oven and get a little hard on top. Then add your favorite toppings and cook until bottom is brown.

This pizza is covered with Mozzarella cheese, grated Parmesan cheese (not sprinkle kind), mushrooms, green peppers and pineapple. Again this is a normally eggfree recipe, but worth sharing. This is also a good sauce for diabetes since there is no sugar added. Enjoy!
