Steak with fresh vegetables

Fresh peppers, onions, one squash and vine ripe tomatoes. Pretty, huh? All simmering in olive oil and a little garlic.
Remove vegetables, and add steak(I use round steak) cut in strips. Sprinkle salt and pepper on the steak. Cook until brown.
Add vegetables back to the pan. Mix 1/4 cup of soy sauce (I use low salt soy sauce), 1 cup of water and 2 tablespoons of flour. Add to pan. Once thickened, add 2 tablespoons of milk. Salt and pepper to taste.

Serve over plain white (or brown) rice. Yum! If your peppers are too hot, add 2 tablespoon of ketchup and 2 teaspoons of sugar. You can even add more milk if it is still too hot.

This dish is one I use for what I have on hand. The squash was added because we only had one squash from the garden. Our peppers were banana peppers, which my hubby planted so close to the red peppers so they were very, very hot! I suggest you use green peppers or non-hot banana peppers. Yet, throw in a little pepper for taste if you are not using anything hot. Now, this is a dish that is normally egg-free, but it is too yummy and quick to cook not to share. Enjoy!
