Most of you have seen Taco Rings at Pampered Chef parties. I love these, but I add a few more things to ours.

Here is the link to the basic Taco Ring and keep reading for my adjustments.

I brown the meat with onions, green chilies, chopped banana peppers, one can of light red kidney beans, and one taco seasonings mix. Once that is done, I add another taco seasonings mix to it.

Then assemble the croissant ring as in the above link, add the meat mixture, and cheese. Wrap the croissants, bake, and then add what toppings you want to the middle or just put on the top of your individual slice. Once we put this on our plates, we add more meat, cheese, salsa and lettuce to the top.
Philadelphia Sugar Cookie (Kraft recipe)

1 package cream cheese (8 oz)
1 cup butter, softened
2/3 sugar (I use 1 cup)
1/4 tsp vanilla (I used 1 tsp pure vanilla)
2 1/2 cups flour
Pinch of salt

Refrigerate for a couple of hours, though best if over night.

Cut out, and decorate (colored sugar). Bake 350 until lightly brown.
These have a great taste. I have found if you want to bake that day, then you might plan on just making round cookies as when they bake, they puff up and do not keep their shape. These cookies come out soft but crispy at the same time. Perfect!
3 tablespoon cream cheese (I like whipped)
1 can (15 oz) pumpkin
½ cup light brown sugar
¼ cup white sugar
1 tablespoon butter
1 teaspoon pure vanilla
1 teaspoon pumpkin spice
1 teaspoon cinnamon
1 frozen pie crust

Mix ingredients, and then pour into pie crust. Bake 350 for 1 hour. SUPER EASY!

I like, after it cools, to put mine in the refrigerator to firm up. You do not have to do this though.
Brown Jimmy Dean Original sausage then add:
¼ cup fresh chives
½ of a small chopped onion
2 jalapenos
2 bell peppers
1 cayenne pepper
2 tablespoons of garlic powder
Take off of the stove, and then add to a bowl the mixture. Add these to the sausage mixture:
1 small container of cream cheese
1 small container of sour cream
3 cups cheddar cheese
1 tablespoon onion powder
1 teaspoon Cajan seasonings
½ cup green onions
Just a dash of salt and pepper

Refrigerate for one hour or until one hour until you serve guests
Use pop can bread or pop can croissants , already cooked dinner rolls or use sausage mixture as a dip.
If using pop can bread (I use Pillsbury Italian), just cut off a piece, add some mixture, and then cook according to directions on the can. For dinner rolls (such as the kind in a bakery), cut off the tops of the bread, take a knife and hollow out the roll, add mixture and bake until tops are brown.

This is a very forgiving recipe. If you do not have sour cream, or certain peppers, you can omit, and it is still delicious. Just make sure you have some kind of hot peppers, cream cheese and cheese for the mixture, and you are all set.
Serve on whole wheat toast. Salt and pepper to taste. Yum, and so easy to make.
Add any additions that you like to this like onion, green peppers, apples and celery.

Even your non-allergic friends will enjoy this chicken salad. I served it at my oldest's birthday party.
Fresh peppers, onions, one squash and vine ripe tomatoes. Pretty, huh? All simmering in olive oil and a little garlic.

Remove vegetables, and add steak(I use round steak) cut in strips. Sprinkle salt and pepper on the steak. Cook until brown.

Add vegetables back to the pan. Mix 1/4 cup of soy sauce (I use low salt soy sauce), 1 cup of water and 2 tablespoons of flour. Add to pan. Once thickened, add 2 tablespoons of milk. Salt and pepper to taste.

Serve over plain white (or brown) rice. Yum! If your peppers are too hot, add 2 tablespoon of ketchup and 2 teaspoons of sugar. You can even add more milk if it is still too hot.

This dish is one I use for what I have on hand. The squash was added because we only had one squash from the garden. Our peppers were banana peppers, which my hubby planted so close to the red peppers so they were very, very hot! I suggest you use green peppers or non-hot banana peppers. Yet, throw in a little pepper for taste if you are not using anything hot. Now, this is a dish that is normally egg-free, but it is too yummy and quick to cook not to share. Enjoy!

Lasagna

Luxury lasagna noodles (do not cook)
Bertolli organic tomato sauce (my favorite, any flavor works)
1 cup Parmesan cheese
15-ounce Ricotta whole milk cheese
2 cups Mozzarella cheese
1 tablespoon Italian seasoning
1/2 lb beef
1/2 onion

Cook beef. Once cooked, add onions and cook until onions are clear. Set beef to the side to cool.

Mix Parmesan, Ricotta and Mozzarella cheese. Add Italian seasonings. Add tomato sauce to beef. Scoop out some of the tomato beef sauce and add to your lasagna pan. Put one layer of the lasagna noodles on top of the beef mixture. Add enough of the cheese mixture to lightly cover the noodles. Add beef, then noodles and cheese mixture again. Repeat until beef mixture is only enough for the top. Cook 350 for an hour.

This also tastes great with no beef. We usually eat this with a salad and breadsticks.
My mother used to cook these all the time when I was little. She used to just leave the egg out, but the brownies would end up in the trash the next day due to hardness. These have been adapted whereas they do not end up hard. This recipe has been broken down in steps as you have the brownie batter, the marble batter, and then you must combine them.

These are great to make with kids! Greatest thing about cooking egg free, no worry about kids eating the batter.

Marble Cream cheese Pecan brownies

Additional items: spatula, 8 x 8 pan, small amount of powdered sugar

Chocolate batter:
1 package German sweet chocolate bar (4oz) ~make sure you buy German~
3 tablespoon butter
3/4 cup white sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup all purpose flour
1 tablespoon cream cheese
1/2 cup or more Pecans
1/2 teaspoon vanilla

Microwave on 50% power chocolate and butter until melted. Set to the side to cool. Once cooled, add sugar, baking powder, salt, flour and tablespoon of cream cheese to cooled chocolate mixture. Mix. Add pecans and vanilla, mix again. If batter is dry looking (usually due to pecans), add 2 tablespoon of water.

Marble batter:
2 tablespoon butter
1 package cream cheese (4oz) Use all but one tablespoon of cream cheese
1/4 cup white sugar
1 tablespoon flour
1 teaspoon vanilla

Mix cream cheese, sugar, flour and vanilla.

Marble time!

Add half of the chocolate mixture to a pan (I usually use an 8 x 8, but use what is on hand). Add total marble batter, then add the rest of the chocolate on top of the marble. Use a spatula to zigzag through the batter to add a marble effect. Do not zigzag too much or you will lose the marble effect.

Bake 350 for about 40 minutes, start checking about 30 minutes by using a toothpick. Once the toothpick comes out clean, your brownies are done.

Set out to cool (I use a cooling rack), then sprinkle with powdered sugar. YUM!

These are always a big hit, but since they take sometime to prepare, I normally do not bake these unless it is a special occasion.

There are many different ways to change up an already existing recipe and make it egg free. My favorite substitute is vanilla yogurt.

We love pancakes! So, I buy Pioneer Brand pancake mix. Then, I change up how I mix the batter. Instead of water, I add milk, and one teaspoon of vanilla yogurt if I am only making pancakes for me and my daughter (3 pancakes). If I make more than 3 pancakes, say for my daughter, me, my husband (2 for him), and our house-guest, I add one heaping tablespoon to the batter. You want batter that is not too thick, but is not too runny so you add more batter and milk if needed. You usually will not have to add more than one tablespoon of vanilla yogurt unless you are cooking the whole box! This stuff really works, yet, it is also working with the milk. Just make sure you have a hot skillet waiting before you add your batter. Your result? Fluffy, yummy pancakes with extra calcium.

I normally only buy chicken stock or beef stock now since it is hard to find egg free bouillon cubes. Or I just make my own. Really? Yes, you may pick up a bottle of chicken or beef bouillon cubes at Walmart (any store) and see no eggs listed in the ingredient list, but look further down and you will see "processed in an egg facility" or something along those lines. This could mean an allergy attack for someone that has a pretty severe allergic reaction. You MUST look at the bottom of all packages when looking for egg free. You will be surprised how easy it is to miss it. My husband bought French fries a few weeks ago, and the bottom of the package had a warning on it for eggs and other allergic triggers. I kid you not!!

For brownies, I make them from scratch (which I will share later), omit the eggs and replace with a tablespoon of cream cheese, and 2 tablespoons of water. You can do this for Duncan Hines mixes as well, and I have had much success with the outcome. I also do this for cupcakes. Cakes are still a little bit of a problem since they crumble, but I am working on them. I am going to make a cake soon with the binder being vanilla pudding. I have done it with cream cheese before and the cakes are very, very yummy, but crumbly. So cupcakes work best for me. Banana bread/cakes seem to be the exception. Just omit the eggs (works fine with banana cake/bread) and add a little water. You can use some vanilla yogurt, cream cheese or even applesauce for banana cake, but just a little and watch the batter. Just like pancakes, not too thick and not too thin.

Experiment and have fun!
